Greek Souvlaki Recipe With Ladolemono ( Pork Skewers With Lemon Dressing)

Greek Souvlaki with Ladolemono features marinated pork neck cut into small cubes, threaded onto wooden skewers, and grilled. The marinade of lemon juice, olive oil, oregano, salt, and pepper imparts a bright and aromatic flavor to the pork. The dish is served with a ladolemono dressing—a creamy blend of lemon juice and olive oil—drizzled over the grilled skewers for a fresh citrus finish.

Description

The pork neck is cut into uniform small squares approximately 2cm by 2cm, then marinated with lemon juice, olive oil, oregano, and seasoning to enhance its natural flavors. After marinating for up to two hours or overnight for deeper taste, the meat is grilled, turning periodically to cook evenly while avoiding burning the wooden skewers. Careful placement on the grill helps prevent the skewers from charring excessively.

Ladolemono dressing is made by vigorously shaking lemon juice with two-thirds olive oil until it emulsifies into a creamy sauce, which is poured over the hot grilled skewers just before serving. A sprinkle of extra oregano adds a traditional garnish. This preparation highlights the bright, tangy, and herbaceous qualities typical of Greek cuisine.

If a dressing container is unavailable, using an empty bottle with a small hole in the lid provides an effective alternative for shaking the dressing.

Ingredients

Servings

For The Skewers:

  • 700 grams pork neck boneless
  • 1 lemon juiced
  • 3 tablespoons olive oil
  • 1 teaspoon oregano plus some extra for garnish, dried
  • salt
  • black pepper
  • 8 wooden skewers

For The Ladolemono Dressing:

  • 1 lemon juiced
  • olive oil

Instructions

For The Skewers:

  1. Cut the meat into small 2cm x 2cm square pieces. About 1 cm thick.
  2. Thread the meat on wooden skewers. Once you're done, add the skewers in a small baking pan or food storage box.
  3. Pour the lemon juice and olive oil. Add the oregano and a bit of pepper and mix well. Flip the skewers a few times for the marinade to spread evenly.
  4. Cover and refrigerate for up to 2 hours or overnight for an even stronger flavor.
  5. Grill the meat for 10-15 minutes turning them every now and then.

For The Ladolemono Dressing:

  1. In a dressing container (one that you can shake and comes with a small hole), add the lemon juice and ⅔ of olive oil.
  2. Shake the container until a creamy dressing forms and pour over the souvlakis, right as they come out of the grill.
  3. Serve with a sprinkle of oregano on top.

Notes

  • When grilling, avoid placing wooden skewers directly over high flames to prevent burning.
  • If you lack a dressing container, an empty water bottle with a small hole in the cap can be used to shake the ladolemono dressing until creamy.
