Greek Spaghetti Bolognese (Makaronia Me Kima)
Description
This Greek pasta dish begins by sautéing minced onions and garlic in olive oil until caramelized, followed by browning ground beef or a mix with pork. The meat is seasoned with cloves, allspice, cinnamon, bay leaves, and thyme, then deglazed with sweet red wine to add depth.
Chopped ripe tomatoes and concentrated tomato paste are stirred in, optionally thickened with flour. The sauce simmers gently for about 90 minutes with carrot and celery added, allowing flavors to meld and liquids to reduce to a thick consistency.
Spaghetti is cooked separately and served topped generously with this rich meat sauce and grated cheese. The dish balances the savory meat with aromatic spices and a subtle sweetness from wine and tomato, offering a comforting variation on traditional Bolognese.
Ingredients
- 40 ml olive oil
- 1 large onion minced
- 2 large garlic chopped
- 650 grams / 1,7 lb ground beef or half ground beef & half ground pork, lean
- 60 ml sweet red wine
- 1 small tomato chopped, very ripe
- 8-10 pieces allspice
- 6-7 pieces cloves
- 1 small cinnamon stick
- 2 bay leaves dried
- 1 teaspoon thyme dried
- 7 tablespoons tomato paste
- 1 carrot peeled
- 1 tick of celery without the leaves
- kosher salt
- ground black pepper
- 500 grams spaghetti dried
Instructions
- Heat olive oil in a medium sized pot over high heat. Caramelize the onion and the garlic.
- Add the ground meat. Start breaking it apart with a wooden spoon. Add a bit of kosher salt (to help remove its juices).
- Add the cloves, allspice, the bay leaves, thyme, and cinnamon. Pour in the wine and stir until it evaporates.
- Once the meat has dried completely from its juices. Add the chopped tomato and tomato paste and stir for a minute or 2. OPTIONAL: At this point, you may add 1-2 tablespoons of flour to thicken the sauce.
- Cover with water and add the carrot and celery. Reduce heat to medium-low and simmer for about 1 hour and 30 minutes or until sauce is thick enough.
- Season with pepper and extra salt if needed.
- Cook pasta according to package instructions.
- Serve with plenty of sauce and grated cheese on top.
