Greek Spinach and Rice – Spanakorizo
Description
Fresh spinach is wilted with lemon juice and a bit of olive oil, then drained to reduce excess moisture. Onions sauté in olive oil until soft, then combined with wilted spinach, dried spearmint, dill, and warm water to form the cooking liquid. Medium-grain rice is added and simmered covered until tender, absorbing the flavors and moisture. The optional addition of tomato paste can deepen the flavor and add subtle richness.
The final dish delivers tender rice with soft spinach pieces imbued with citrus and herb notes, lightly seasoned with salt and black pepper. It’s a comforting, moist preparation that highlights fresh herbs and lemon’s brightness.
Spanakorizo can be enjoyed warm or at room temperature, often accompanied by a drizzle of olive oil and an extra squeeze of lemon juice. It pairs well as a side dish to grilled meats or lighter fare.
Adding tomato paste in the cooking phase enriches color and flavor but is optional.
Ingredients
- 1 pound (450 g) spinach fresh, rinsed
- lemon juice of half
- 1 onion chopped
- 1 spring onion chopped
- 2 ½ tablespoons olive oil plus more for drizzling
- mint dry, preferably spearmint
- 1-2 tablespoons dill chopped
- 2/3 cups water
- 1/3 cup (60 g) medium grain rice
- salt
- black pepper
- 1 tablespoon tomato paste optional
Instructions
- In a large pot wilt the spinach with the lemon juice and 1 teaspoon olive oil. Set aside to drain.
- In another pot sauté the onion with the rest of the olive oil until soft.
- Add the spinach, dry mint, dill and 2/3 cup warm water and bring to a boil.
- Add the rice, salt (as needed) and pepper and simmer, covered for about 20 minutes until rice is soft. Add additional warm water as needed.
- Serve warm or at room temperature with a squeeze of lemon juice and a bit of olive oil and feta.
Notes
- Tomato paste may be added during the rice cooking step to deepen flavor and color.
