Ingredients
- 1 English cucumber
- 2 TBSP hummus any flavor
- ¼ cup feta cheese crumbled
- 1 cup tomato cherry, roma, grape, etc, chopped
- 1 cup microgreens fresh
- ¼ cup red onion sliced, or to taste
TASTY EXTRAS:
- lemon fresh, wedges
- Pepperoncini peppers
- olives sliced
- parsley fresh chopped
LEMON DRESSING:
- ¼ cup lemon juice (approx 2 lemons)
- ¼ cup olive oil quality
- 1 TBSP pure maple syrup (honey works too!)
- 1 tsp Dijon mustard
- ½ tsp garlic minced
- 1/8-1/4 tsp salt sea salt
- ⅛ tsp black pepper
GREEK DRESSING:
- ¼ cup extra virgin olive oil
- 2 TBSP red wine vinegar
- 1 TBSP Dijon mustard
- ½ tsp parsley or 1 tsp fresh, dried
- ½ tsp garlic powder
- ¼ tsp oregano dried
- ¼ tsp basil dried
- ⅛ tsp salt
- ⅛ tsp black pepper
Instructions
- Choose your favorite dressing from above and combine ingredients in a mason jar. Pop on the lid, shake, and set aside.
- Using a spiralizer or veggie peeler curl one english cucumber into noodles. I love the skin on English cucumbers and always leave mine on, but feel free to peel your cuke if you prefer!
- Divide between two bowls (or serve in one large bowl) and top with tomatoes, feta, hummus, red onion, and all the extra veggies your heart desires.
- Shake dressing again before serving and dive in!
