Greek Spiralized Cucumber Salad

Greek Spiralized Cucumber Salad combines thin cucumber noodles with tomatoes, crumbled feta, red onions, hummus, and microgreens. The salad is brightened by a choice of lemon or Greek dressing, which adds citrus and herbaceous notes. The crisp cucumbers and fresh vegetables provide a refreshing contrast to the creamy feta and hummus, making it a light yet flavorful salad option. Its versatility allows for assorted extras like olives and pepperoncini, offering varied taste and texture.

Description

Greek Spiralized Cucumber Salad features English cucumbers cut into delicate ribbons or noodles using a spiralizer or peeler. These cucumber noodles form a crisp foundation tossed with fresh tomatoes, red onions, crumbled feta cheese, hummus, and microgreens. You can customize the salad by adding pepperoncini peppers, olives, or fresh parsley for extra brightness. A dressing choice between a bright lemon vinaigrette or an herbaceous Greek dressing balances the vegetables with citrus, vinegar, herbs, and garlic flavors.

The texture contrasts between crunchy cucumber and juicy tomatoes play well with the creamy feta and hummus, offering a fresh, light salad suited for warm days or as a vibrant side. It pairs well with grilled foods or can be enjoyed alone as a nutritious snack.

To prepare, toss the spiralized cucumbers and vegetables with the chosen dressing just before serving to keep the salad crisp. The salad's calories vary depending on dressing choice, so adjust amounts as desired to fit your preferences.

  • Pepperoncini peppers
  • olives sliced
  • parsley fresh chopped

LEMON DRESSING:

  • ¼ cup lemon juice (approx 2 lemons)
  • ¼ cup olive oil quality
  • 1 TBSP pure maple syrup (honey works too!)
  • 1 tsp Dijon mustard
  • ½ tsp garlic minced
  • 1/8-1/4 tsp salt sea salt
  • tsp black pepper

GREEK DRESSING:

  • ¼ cup extra virgin olive oil

  • tsp salt
  • tsp black pepper

Instructions

  1. Choose your favorite dressing from above and combine ingredients in a mason jar. Pop on the lid, shake, and set aside.
  2. Using a spiralizer or veggie peeler curl one english cucumber into noodles. I love the skin on English cucumbers and always leave mine on, but feel free to peel your cuke if you prefer!
  3. Divide between two bowls (or serve in one large bowl) and top with tomatoes, feta, hummus, red onion, and all the extra veggies your heart desires.
  4. Shake dressing again before serving and dive in!

Notes

  • Use a spiralizer or vegetable peeler to make thin cucumber noodles for best texture.
  • Choose between lemon or Greek dressing depending on the flavor profile you prefer.
  • Prepare salad just before serving and add dressing last to maintain crispness.
  • Nutrition varies based on dressing type and amount used; approximate calories are 70-100 per tablespoon of dressing.
