Greek Steak Tacos with Cucumber Salsa

Ingredients

Servings

For El Griego Sauce:

  • 1 cucumber peeled, medium
  • 1 garlic peeled, clove
  • 1 cup PLAIN yogurt
  • 2 teaspoons lemon juice fresh
  • ½ teaspoon salt
  • ¼ teaspoon dill dried

For the Cucumber Salsa:

  • 1 cucumber finely diced, small
  • 4 ounces kalamata olives pitted and chopped
  • 1 cup grape tomatoes halved
  • 1 lime juiced
  • ½ jalapeño seeded if desired and minced
  • 1 clove garlic minced
  • ½ cup cilantro chopped, fresh
  • Pinch salt freshly ground
  • Pinch black pepper freshly ground

For the steak:

  • 2 teaspoons cumin ground
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • 1 ½ pound flank steak or skirt steak
  • 1 tablespoon extra-virgin olive oil

For serving:

  • 12 corn tortillas store-bought or homemade, warmed
  • el griego sauce

Instructions

Make El Griego Sauce:

  1. Grate the cucumber and garlic clove into a bowl. Add the yogurt, lemon juice, salt, and dill. Mix well. Cover and refrigerate for at least 1 hour before serving. Store leftovers in an airtight container in the fridge for up to 5 days.

Make the Cucumber Salsa:

  1. In a medium bowl, combine cucumber, Kalamata olives, grape tomatoes, lime juice, jalapeño, garlic, and cilantro. Season with a pinch of salt and pepper. Set aside.

Cook the steak:

  1. In a small bowl, mix the cumin, paprika, and ½ teaspoon salt. Season the steak with the mixture on both sides, then brush olive oil over the steak.
  2. Preheat a grill or heat a large skillet over medium-high heat. Cook the steak for 5 to 7 minutes on the first side, flip, and cook for an additional 5 minutes, or until it reaches your desired doneness.
  3. Transfer the steak to a plate, cover, and let it rest for 15 minutes. Slice the steak thinly against the grain.

Serve:

  1. To serve, place 2 or 3 steak slices on each tortilla. Top each taco with 1 to 2 tablespoons Cucumber Salsa and drizzle with some sauce.
