Description

- 1 - 1 1/2 lbs chicken breast cut into 2 inch pieces
For the marinade
- 1 tsp salt
- 1/2 tsp black pepper
- 2 garlic cloves, pressed
- 1 tbsp oregano dried
- 1 lemon juiced
- 2 tbsp mustard
- 1/2 cup yogurt plain, Greek
- 2 tbsp olive oil
For the breading
- 1 cup breadcrumbs
- 2 tbsp Parmesan Cheese shredded
- 1 tbsp onion powder
- 1 tbsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper

Instructions
- Marinate the chicken: Make the marinade in a medium bowl by whisking together all of the marinade ingredients. Add the chicken pieces to the bowl with the marinade, toss and let sit for 30 minutes in the fridge.
- Preheat the oven to 400F.
- Make the breading: mix together the breadcrumbs, shredded parmesan cheese, onion powder, garlic powder, salt and pepper. Bread the chicken by removing the small pieces of chicken one at a time and dunking into the breadcrumbs mixture, pressing gently to adhere the breadcrumbs. Add each breaded chicken nugget to the parchment lined sheet pan. Spray the tops with cooking spray
- Bake for 18-22 minutes or until golden brown and the chicken is cooked through. Serve garnished with fresh dill, a squeeze of lemon and tzatziki sauce for dipping!
