Greek Tacos
Description
Greek Tacos highlight seasoned ground turkey cooked with dried oregano and wilted spinach, providing a hearty filling with herbal notes and a mild earthiness from the spinach. The choice of flour tortillas softened or lightly charred offers a flexible and soft container for the toppings. Fresh diced red onion, cucumber, and grape tomatoes add crispness and a refreshing contrast to the warm meat filling. Chopped kalamata olives contribute a salty, briny depth, while crumbled feta cheese adds creaminess and tang to complement the other ingredients.
The tacos are assembled by spreading hummus along the tortilla to add creaminess and flavor under the turkey mixture, layering textures and moisture evenly. The cooking method involves browning the turkey first before incorporating spinach briefly to meld flavors and avoid overcooking the greens.
This dish fits well as a casual lunch or dinner option that brings traditional Mediterranean components together in a taco format, offering a hand-held meal with balanced savory and fresh elements.
Notes mention a slight adaptation from a meal planner and provide nutrition as an estimate, suggesting the recipe is flexible and can be adjusted. The spinach should be well thawed and drained to avoid excess moisture affecting the taco filling’s texture.
Ingredients
- extra virgin olive oil
- 1 lb ground turkey
- 1 teaspoon oregano dried
- 10 oz spinach thawed and excess water squeezed out, frozen
- 8 flour tortillas
- 8 tablespoons hummus
- 1 red onion chopped
- 1 cucumber chopped, small
- 1/2 cup grape tomato halved or quartered, or cherry tomato
- kalamata olives (chopped)
- 1/2 cup feta cheese crumbled
Instructions
- In a large skillet, heat 1 tablespoon of olive oil. Add the turkey and cook, breaking it up as it cooks, until it is browned and cooked through. Add the oregano and the thawed spinach. Reduce the heat to low and let it cook for 2 minutes. Season to taste with salt and pepper.
- If desired, heat the tortillas in the microwave or char them over a gas stove.
- Assemble your tacos by spreading 1 tablespoon of hummus down the center of each tortilla. Spoon on some of the turkey mixture over, then top with red onion, cucumber, tomatoes, olives and top with feta cheese.
Notes
- Make sure the thawed spinach is well squeezed to remove excess water before adding to avoid soggy filling.
- Heat tortillas briefly before assembling to improve pliability and enhance flavor.
- Season the turkey mixture with salt and pepper to taste once spinach is added for balanced seasoning.
