Greek Vegetable Stew

Greek Vegetable Stew combines olive oil sautéed onions and garlic with a mix of green beans, tomatoes, zucchini, eggplant, bell peppers, and potatoes simmered in tomato paste and seasoned with oregano. The result is a hearty yet light stew of tender vegetables with Mediterranean flavors.

Description

This recipe starts by softening onions and garlic in olive oil, then adding green beans to begin cooking before incorporating chopped tomatoes and tomato paste to build the base. The remaining vegetables along with parsley, oregano, salt, and pepper are added with water and simmered with the pot's lid partially open for 45 minutes to an hour until the sauce thickens and the vegetables become tender.

The stew highlights the natural textures of the vegetables softened through slow simmering, melding into a sauce lightly flavored with herbs. It's a dish that captures Greek country-style cooking tradition.

This stew can be served as a warm main or side dish and pairs well with crusty bread or rice. The use of lemon or feta cheese can complement it further, though these are not part of the supplied ingredients.
