Greek Yogurt Brownies
Description
The brownies rely on a combination of melted dark chocolate, Greek yogurt, and coconut sugar for flavor and moisture, along with cocoa powder and flour for structure. Baking soda leavens slightly, but the dense batter produces brownies more like a thick cheesecake filling in texture. The inclusion of dairy-free milk and chocolate chips enriches the chocolate profile.
Baking in an 8x8 pan at 350°F, these brownies should be removed when just barely set in the middle, as they continue to firm on cooling. This technique prevents an overbaked, dry result and keeps the brownies fudgy and tender.
These brownies can be stored in the refrigerator for up to four days or frozen for longer storage. Various sugar types can be substituted, and choice of Greek or dairy-free yogurt affects flavor and texture slightly. Avoid overbaking for best results.
Ingredients
- ½ cup dark chocolate melted
- ⅔ cup coconut sugar or white sugar or monk fruit sweetener
- 1 cup Greek yogurt vanilla flavor
- ¾ cup dairy-free milk
- ⅔ cup cocoa powder
- ¾ cup flour all purpose or gluten free
- ½ tsp baking soda
- ¾ cup dark chocolate chips
Instructions
- First, preheat oven to 350 degrees Fahrenheit. Line an 8 inch by 8 inch pan with parchment paper.
- In a mixing bowl, add melted chocolate, Greek yogurt and coconut sugar. Stir to combine.
- Then, pour in milk. Stir until a runny batter forms.
- Add in flour, cocoa powder and baking soda. Stir to combine.
- Fold in chocolate chips. Batter will be very thick like cheesecake filling.
- Transfer batter to the lined pan. Spread into one even layer.
- Bake for 20 to 22 minutes or until just barely set in the middle. These brownies will firm up slightly as they cool.
- Finally, remove from oven. Allow brownies to fully cool before slicing.
Notes
- Sugar options include coconut, white, brown, or monk fruit sweetener for a low-carb choice.
- Use vanilla-flavored or thick dairy-free Greek yogurt to maintain moistness and sweetness.
- The batter is notably thick, similar to cheesecake filling; do not overmix or overbake.
- Brownies will appear slightly underbaked when removed but firm as they cool.
- Store in the refrigerator up to 4 days or freeze up to 1 month.
