Green Beans and Potato Curry

This Green Beans and Potato Curry combines fresh green beans and diced potatoes cooked with a blend of spices including cumin, chili powder, turmeric, and garam masala. The vegetables are sautéed with aromatics like garlic and onion, then simmered with tomatoes to form a fragrant, flavorful curry. The dish is finished with spices that add warmth and earthiness.

Description

The curry begins by heating neutral cooking oil and tempering whole cumin seeds to release their aroma. Finely chopped garlic and diced onions are sautéed until soft, followed by the addition of diced tomatoes cooked down to form a base. Potatoes and green beans are then added and stir-fried briefly to retain some texture. Ground spices—chili powder, turmeric, cumin powder, and salt—are incorporated and cooked to develop complexity.

Adding a small amount of water and covering the pan allows the vegetables to steam gently until tender without becoming mushy. The garam masala is added last, providing a final layer of spice and fragrance. This curry can be served warm alongside homemade chapatti or other flatbreads for a satisfying meal.

The recipe uses commonly available spices and straightforward techniques, suitable for home cooks looking for a vegetable curry with moderate heat and balanced flavors. The ingredient list and method emphasize freshness and timing to keep the beans crisp and potatoes fully cooked.
