Green Beans with Chinese Olive Vegetable

Green Beans with Chinese Olive Vegetable is a simple stir-fried side dish combining tender blanched green beans with aromatic garlic and savory Chinese olive vegetable, a salty preserved condiment. The quick cooking preserves the crispness of the beans while infusing them with umami and garlic flavor.

Description

This dish starts by boiling green beans briefly in salted water with a touch of vegetable oil to maintain color and texture before draining. Garlic is stir-fried in vegetable oil until fragrant in a wok, to which the green beans and Chinese olive vegetable are added. The ingredients are quickly fried together, allowing the beans to absorb the salty, tangy flavors of the olive vegetable while retaining a slight crispness.

The Chinese olive vegetable gives a distinctive salty and slightly fermented flavor, balancing the freshness of the green beans and the warmth of garlic. The dish is lightly seasoned with salt if needed, but tasting first is important due to the saltiness in the condiment.

This recipe is a straightforward vegetable side suitable for meals that benefit from a flavorful green vegetable with an Asian twist.
