Description

The casserole begins by melting grated Monterey Jack and cheddar cheese into a mixture of cream of chicken soup and milk to form a creamy cheese sauce, into which diced green chiles are stirred. Ground beef is browned with chopped onion and seasoned with oregano, garlic powder, and salt, developing a spiced, savory filling. In a greased baking dish, layers are constructed with tortilla strips, half the beef mixture, and half the cheese sauce, repeated to build a multi-layered dish. Reserved cheese crowns the top before baking at 350ºF until heated through and cheese melts.

The combination results in slices that hold together after resting, with softened tortillas melding with richly seasoned beef and cheesy sauce, providing a warm, hearty dish with a mildly spicy note from the green chiles.

Letting the casserole rest 10 to 15 minutes before serving helps it firm up to maintain slice shape. The recipe calls for standard canned ingredients for reliability and ease of preparation.

  • 1 cream of chicken soup 10.5 oz can
  • 1 pound cheese I used a mix of monterey jack and cheddar, grated
  • 1 cup milk
  • 2 diced green chiles 4 oz cans each
  • 1 pound ground beef
  • 1 onion chopped, medium
  • 1 tablespoon oregano dried
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 corn tortillas 10 oz package, each cut into eighths

Instructions

  1. Preheat oven to 350ºF.
  2. In a saucepan, combine the soup, milk, and the 3/4 of the cheese, reserving the remaining 1/4 for topping the casserole. Once the cheese is melted, stir in the green chiles.
  3. In a skillet, brown the beef with the onions. Add in the oregano, garlic powder and salt.
  4. In a well greased 9×13 casserole dish, layer half of the tortilla strips. Spread 1/2 of the beef mixture on top, followed by 1/2 of the cheese mixture. Repeat layers. Sprinkle reserved cheese on top.
  5. Bake in preheated oven until heated through and cheese is melted, about 30 minutes.  Let the casserole sit for 10-15 minutes before serving if you want the slices to hold together.

  • Allow casserole to rest 10–15 minutes after baking for slices to hold together well when served.
  • Use a mixture of Monterey Jack and cheddar cheese for balanced flavor and meltability.
