Ingredients

  • 1 lb ground beef
  • ¼ onion white, diced
  • 1-2 garlic clove, diced
  • 1 Roma tomato diced
  • 4-6 Anaheim chile roasted, peeled and diced, or Hatch or Pueblo chile
  • 2 russet potatoes or 1 medium potato, small
  • 1 cup chicken broth or beef broth
  • 1 teaspoon kosher salt plus more to taste
  • ½ teaspoon black pepper ground
  • teaspoon cumin ground

Instructions

  1. In a medium pan over medium-high heat, brown the meat and break it up as it cooks using a wooden spoon. Continue to cook until the meat is almost completely cooked through.
  2. Add onion and garlic and cook until translucent and fragrant.
  3. Add the tomato, green chiles and season meat with salt, pepper and cumin. Cook for another minute.
  4. Dice potatoes into ½" pieces.
  5. Add potatoes and broth. Mix and bring to a simmer.
  6. Turn heat to medium-low, cover and cook down for about 8-10 minutes.
  7. Once most of the liquid is consumed, test the potatoes with a fork. If they are fork-tender move onto the next step, if not, cover and cook for another 1-2 minutes.
  8. Taste and adjust salt and pepper if needed.
  9. Serve.
