Green Harissa Tartines with Bacon and Avocado

Ingredients
- 6 thick cut sliced of bread toasted
- 3 avocados cut in half and thinly sliced
- 6-12 Smithfield Hometown Original Bacon strips cooked until crispy and broken into smaller pieces
- 1 recipe Green Harissa below
For the Green Harissa
- 1 Jalapeño
- 1 bunch cilantro
- 1 bunch parsley
- 1 cup fresh spinach
- ½ cup almonds
- 1 clove garlic roughly chopped
- 1 ½ teaspoons freshly-squeezed lemon juice
- ½ teaspoon ground cumin
- ½ teaspoon lemon zest
- 4 tablespoons extra-virgin olive oil divided
- Water as needed
Instructions
For the Green Harissa
- Combine everything in a food processor and whirl for 2 minutes until smooth. Add a few teaspoons of water if you need to smooth it out. It should be pesto consistency.
- Slather a few tablespoons of the Green Harissa on each piece of bread. Top with ½ avocado thinly sliced and fanned out and finish with equal amounts of the cooked bacon and herbs. Serve immediately.
Notes
- Keep cooked bacon in the fridge at all times. It's perfect for recipes like these or adding a big of crunch to a salad.
