Ingredients

Servings
  • 6 bread toasted, thick cut sliced
  • 3 avocado cut in half and thinly sliced
  • 6-12 Bacon cooked until crispy and broken into smaller pieces, Smithfield Hometown Original, strips
  • 1 green harissa below, recipe

For the Green Harissa

  • 1 jalapeño
  • 1 cilantro bunch
  • 1 parsley bunch
  • 1 cup spinach fresh
  • ½ cup almonds
  • 1 clove garlic roughly chopped
  • 1 ½ teaspoons lemon freshly squeezed juice
  • ½ teaspoon cumin ground
  • ½ teaspoon lemon zest
  • 4 tablespoons extra-virgin olive oil divided
  • water as needed

Instructions

For the Green Harissa

  1. Combine everything in a food processor and whirl for 2 minutes until smooth. Add a few teaspoons of water if you need to smooth it out. It should be pesto consistency.
  2. Slather a few tablespoons of the Green Harissa on each piece of bread. Top with ½ avocado thinly sliced and fanned out and finish with equal amounts of the cooked bacon and herbs. Serve immediately.

Notes

  • Keep cooked bacon in the fridge at all times. It's perfect for recipes like these or adding a big of crunch to a salad.
