Green Rice Casserole
Description
Green Rice Casserole combines cooked basmati rice with sautéed garlic, scallions, and green chiles to create a flavorful base. Fresh spinach and kale are incorporated along with creamy ricotta and sour cream, binding the ingredients while adding moisture and richness. Cheddar cheese is mixed in and sprinkled on top, melting to form a golden, bubbly crust in the oven. Baking at a moderate temperature allows the flavors to meld and the texture to set, producing a creamy interior accented by mild spicy notes from the chiles.
The dish can be served as a side alongside proteins or as a vegetarian main offering a satisfying combination of grains, dairy, and greens. Its warm, cheesy appeal makes it suitable for cooler weather or anytime a filling casserole is desired.
This recipe benefits from measuring salt and pepper to taste and allowing the casserole to rest briefly after baking to firm up, making it easier to serve. Using thawed frozen greens requires draining well to prevent excess moisture.
Ingredients
- 1 tablespoon extra virgin olive oil
- 2 cloves garlic minced
- 2 scallions chopped
- 2 green chiles roughly chopped
- 2 cups basmati rice cooked, substitute long grain
- 1½ cups cheddar cheese divided, shredded
- 1 cup ricotta cheese
- ½ cup sour cream
- 5 ounces spinach thawed and drained if using frozen, fresh
- 5 ounces kale chopped
- salt to taste
- black pepper to taste
Instructions
- Preheat the oven to 320ºF/180ºC. Butter an 8x8-inch baking dish.
- Bring a skillet over low heat, add the olive oil, garlic, scallions, green chiles and cook for 2 minutes. Reserve
- In a large mixing bowl, add the cooked rice, 1 cup of cheddar cheese, ricotta, sour cream, spinach, kale and sauteed garlic, scallions and chiles. Stir to combine.
- Transfer the mixture to a prepared 8x8-inch baking dish. Sprinkle evenly the remaining cheese.
- Bake until cheese is golden and melted, for about 20 minutes.
- Remove from the oven and let it rest for 5 minutes before serving.
Notes
- Make sure to drain thawed spinach thoroughly to avoid a watery casserole.
- Let the casserole rest 5 minutes after baking for easier slicing and serving.
