Grilled BBQ Pork Roast
Description
This recipe begins by brining a 4 lb pork loin roast in a mixture of salt, brown sugar, mashed fresh apricots, rosemary, and thyme overnight or at least four hours, which helps infuse moisture and flavors. After rinsing and drying, a spice rub featuring brown sugar, salt, mustard powder, garlic powder, onion powder, black pepper, and smoked paprika is massaged onto all sides.
The pork is grilled first over direct high heat to sear all sides, locking in juices and developing a crust. Subsequently, the roast is moved to an indirect heat part of the grill for approximately 80 minutes to cook evenly. Near the end, it is brushed with a sweet and tangy barbecue sauce and cooked further until the internal temperature nears 160°F. The roast is then rested covered with foil to retain juices.
The combination of fruit in the brine, aromatic herbs, and smoky spices creates a flavorful crust with a tender, juicy interior. The finishing barbecue glaze adds a glossy, sweet note that balances the savory spices.
Ingredients
Brine
- 1 cup salt
- 1 cup brown sugar packed
- 2 apricots pit removed and mashed, fresh
- 3 rosemary sprigs
- 6 thyme sprigs
- water to cover
Spice Rub
- 2 tbsp brown sugar packed
- 1 tbsp salt
- 1 tbsp mustard powder ground
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp black pepper
- 2 tsp smoked paprika
Grilled Pork Roast
- 4 lb pork loin roast
- 1 cup barbecue sauce sweet 'n tangy variety
Instructions
Brine
- in a large stock pot combine the salt, brown sugar, mashed apricots, rosemary and thyme
- add about a cup or two of water and mix
- add in the pork roast and then add more water until covered
- allow to sit overnight or at least 4 hours
Spice Rub
- combine brown sugar, salt, mustard powder, garlic powder, onion powder, pepper and smoked paprika in a bowl and set aside
Grilled BBQ Pork Roast
- pour out the brine and rinse the pork roast
- place on a baking sheet and pat dry
- sprinkle the rub over all sides of the roast and massage it in
- heat grill with a high heat
- place pork roast and allow to cook over direct flame for 10 minutes per side, on all sides, to sear in the juices
- remove from direct flame and cook on an indirect flame for 80 minutes
- brush all sides of the pork roast with the barbecue sauce and cook for 10 more minutes, or until an internal temp of just under 160 degrees F is reached
- remove from grill, cover loosely with foil and allow to rest for at least 10 minutes. (The internal temp of the meat will continue to rise to at least 160 degrees F
- slice thinly and serve with extra barbecue sauce
