Grilled caprese panino has pesto, tomatoes and gooey mozzarella cheese.

Ingredients
- 2 lices Rustic bread or sour dough
- 2 lices mozzarella cheese
- 2 Tablespoons pesto homemade or store-bought
- 2 lices tomato fresh
- 3 Tablespoons olive oil
Instructions
- Brush both sides of bread with olive oil, (inside and outside)
- Spread pesto on insides of both slices.
- Add slices of cheese and tomatoes.
- Press between a panini press or in a hot pan, pressing down. Flip sandwich and continue cooking until cheese is melted and bread is toasted.
