Grilled Chicken Breast (With The Best Marinade!)
Description
The chicken breasts are sliced lengthwise to create thinner cuts that cook evenly and quickly. They are marinated in a mixture containing olive oil, minced garlic, freshly squeezed lemon juice, dried oregano, paprika, ground coriander, tomato paste, and kosher salt. This combination provides a complex flavor profile with citrusy, herbal, and mildly smoky notes. After marinating for 30 minutes to 12 hours, the chicken is grilled over medium-high heat (around 475°F), cooking for about 5 minutes per side without flipping prematurely to ensure a good sear and prevent sticking.
Removing the grill lid briefly after grilling and letting the chicken rest helps redistribute juices for moistness. Sprinkling chopped parsley as a finishing touch adds freshness and visual appeal. The finished chicken breasts are suitable as a main dish served alongside various sides.
Attention to technique—such as slicing the breasts thinner, cooking at high heat, and not flipping too early—helps achieve a juicy and flavorful grilled chicken. Squeezing fresh lemon juice on the cooked chicken brightens the taste further.
Ingredients
- 4 chicken breast
- 2 tbsp olive oil
- 3 cloves garlic minced
- 1 lemon juiced
- 1 tsp oregano
- 1 tsp paprika
- ½ tsp Coriander
- 1 tbsp tomato paste
- kosher salt to taste
- ½ cup parsley chopped
Instructions
- Slice the chicken breasts lengthwise to have two thinner pieces.
- In a bowl mix the olive oil, garlic, lemon juice, oregano, paprika, coriander, tomato paste and salt.
- Add in the chicken breasts and make sure every piece is well coated with the marinade. Cover and let it sit for 30 minutes at room temperature or up to 12 hours in the fridge.
- Preheat the grill to medium high, about 475 F.
- Grill the chicken breasts for 5 minutes on one side. Don't flip until the chicken releases itself. Then flip and grill 4 minutes on the other.
- Remove from grill and let it rest for a couple of minutes then sprinkle parsley as a final garnish and serve.
Notes
- Slice chicken breasts lengthwise for even, quicker cooking and better searing.
- Preheat grill to high heat before cooking to ensure proper searing and prevent sticking.
- Cook chicken thoroughly on the first side until it naturally releases from the grill before flipping.
- Close grill lid during cooking for even heat distribution and better cooking.
- Finish with a squeeze of fresh lemon juice after grilling to enhance flavor.
- Be patient and avoid rushing the cooking process to keep chicken juicy and well-seared.
