Healthy Grilled Chicken Caesar Salad with avocado and a light yogurt dressing, a healthier version of the classic caesar salad. Super quick and easy to make, this is a great recipe for a work lunch or light dinner.

Ingredients
- 2 medium chicken breasts
- 1 avocado
- 1 packet crunchy salad (one Romaine lettuce)
- 1 cup croutons
- 2 tablespoon Parmesan Cheese
for the yogurt dressing
- 3 tablespoon Greek yogurt
- 1 teaspoon olive oil
- 1 tablespoon lemon juice
- 1 ½ teaspoon Worcestershire sauce
- 2 cloves of garlic, minced
- Black pepper to taste
for the grilled chicken
- 1 teaspoon garlic granules
- ½ teaspoon paprika
- 1 teaspoon olive oil
- salt and pepper to taste
Instructions
- To cook the chicken, cut the chicken breasts into chunks, add them to a re-seable bag together with the olive oil, paprika, garlic, salt and pepper. Shake the bag well to coat.
- Heat up a grill pan, add the chicken pieces and cook for 6-7 minutes until cooked through.
- Remove from the heat and set aside.
- Add the salad to a bowl together with the chopped avocado, croutons, cooked chicken and parmesan.
- To make the dressing, combine the yogurt, olive oil, lemon juice, garlic mince, worcestershire sauce and pepper.
- Drizzle it over the salad, and toss well to coat.
- Serve cold.
