Grilled Chicken Tacos
Description
This recipe begins with marinating chicken strips in olive oil, lime juice, garlic, cilantro, and chipotle paste, infusing the meat with a smoky and tangy flavor before grilling. The chicken is cooked on a grill pan under a broiler for 18-20 minutes, turning halfway to ensure even cooking and retain juiciness. A crisp salsa made from finely chopped romaine, diced avocado, cherry tomatoes, and thinly sliced red onion is dressed with lime juice and seasoning, adding a fresh contrast to the smoky chicken. The seasoned filling is then served in soft taco shells, creating a well-balanced combination of textures and flavors.
These tacos make a satisfying main meal and can be paired with tortilla chips and Spanish rice to bulk up the serving size.
Marinating the chicken for at least an hour improves flavor absorption. Care should be taken not to overcook the chicken breasts to prevent dryness. Boneless, skinless chicken breasts may be used as a substitute if preferred.
Ingredients
Chicken:
- 600 g chicken breast cut in to strips
- 2 tablespoon olive oil
- 1 lime (Juice only)
- 3 garlic crushed, clove
- 1 pinch sea salt
- 1 pinch black pepper
- 1 handful cilantro finely chopped, fresh
- 2 tablespoon chipotle paste
Salsa/Salad:
- 2 head romaine lettuce finely chopped
- 1 avocado diced
- 10 cherry tomato quartered
- 0.5 red onion thinly slices
- 1 pinch sea salt
- 1 pinch black pepper
- 1 lime (Juice only)
Others:
- 8 soft taco shell
Instructions
- Put 2 tablespoon Olive oil, juice of 1 Lime, 3 Garlic clove, 1 pinch Sea salt and ground black pepper, 1 handful Fresh coriander (cilantro) and 2 tablespoon Chipotle paste into a large bowl and mix well.
- Add 600 g Chicken breast and mix so they are well coated and put them in the fridge for an hour.
- Heat the grill (broiler) and put the chicken on a grill pan and under the grill for 18-20 minutes, turning half way through. Make sure to check the chicken is cooked through before serving.
- Mix together 2 head Romaine lettuce, 1 Avocado, 10 Cherry tomatoes, 0.5 Red onion, 1 pinch Sea salt and ground black pepperand the juice of1 Lime . Divide between 8 Soft tacos.
- When the chicken is cooked, cut into chunks and put into tacos with the salsa.
Notes
- Marinate the chicken for a minimum of one hour to deepen flavor absorption.
- Avoid overcooking chicken breasts to maintain juiciness and tenderness.
- Boneless, skinless chicken breasts can be used instead of other cuts if desired.
- Serve tacos with tortilla chips and Spanish rice to increase portion size and variety.
