Grilled Chicken Tikka Skewers

These Chicken Tikka Skewers consist of tender pieces of boneless chicken breast, marinated in a curry spiced yogurt marinade, then grilled to perfection over your grill or smoker. Hugely popular in the Indian subcontinent, they are sure to become equally as popular in your home as well.

Ingredients

Servings
  • 3 chicken breast
  • 4 Tablespoon lemon juice
  • 2 teaspoon kosher salt

Marinade

  • 2 .3 ounce PLAIN yogurt containers
  • 2 Tablespoon garlic squeeze or paste form
  • 1 Tablespoon ginger squeeze or paste form
  • 2 teaspoon cumin
  • 2 teaspoon coriander powder
  • 2 teaspoon paprika or Indian Red Chili Pepper, sweet
  • 2 teaspoon black pepper
  • 1 teaspoon turmeric powder
  • ½ Bunch cilantro
  • 1 teaspoon salt

Instructions

  1. Cube the chicken and place in a bowl. Add the lemon juice and the salt and stir to combine. Let set while you prepare the rest of marinade.
  2. In a sperate bowl combine the yogurt with the garlic, ginger, cilantro, and spices. Add to the bowl with the chicken and marinade 8-48 hours. At least overnight is best.
  3. Prepare your grill or smoker for indirect heat and bring to 450 degrees. Grill the chicken until you reach and internal temp of 160 degrees (carryover temp will take it to 165 degrees). Flip the chicken every 5 minutes and rotate the skewers as needed to ensure even cooking. This typically takes 15-20 minutes, but may take longer depending on cooking conditions.
  4. Remove the chicken and cover with foil. Let rest for 5 minutes before serving.
