Description
Grilled Chimichurri Chicken Skewers are prepared by marinating boneless, skinless chicken breast cubes in chimichurri sauce, a pungent and herby blend of parsley, garlic, vinegar, and oil, which infuses the chicken with vibrant flavor. Coarse salt is added to enhance seasoning.
The chicken, along with an assortment of red, yellow, and green bell peppers plus red onion, is threaded onto soaked skewers. Grilling over direct heat for 10-15 minutes, with a turn halfway, ensures even cooking and a slight char to develop on both chicken and vegetables. The goal is a fully cooked chicken reaching 165°F with tender, lightly charred veggies.
The skewers are served with additional chimichurri sauce, reinforcing the fresh herbal and tangy notes. This dish showcases balance between smoky grilled meat and sweet, crisp peppers, making it suitable for summertime dinners or barbecues.
Ingredients
- 3 chicken breast cut into cubes, boneless, skinless
- 1/4 cup chimichurri sauce plus more for serving
- 2 green bell pepper cut into 1-inch cubes
- 2 yellow bell pepper cut into 1-inch cubes
- 2 bell pepper cut into 1-inch cubes, red
- 1 red onion cut into 1-inch cubes
- 1 tsp salt coarse
- skewers metal or wooden, soaked in water for 1 hour
Instructions
- Add the cubes of chicken to a bowl, then add the chimichurri sauce. Stir to combine.
- Add the coarse salt, and stir to combine.
- Assemble the skewers by inserting the chicken, peppers, and onion onto soaked skewers, then grill over direct heat for approximately 10-15 minutes, turning halfway through to grill evenly on both sides. Make sure the chicken is cooked through and reaches 165 degrees F when tested with an instant read meat thermometer.
- Serve with extra chimichurri sauce.
