Grilled Cilantro Lime Chicken

This Grilled Cilantro Lime Chicken features boneless, skinless chicken breasts marinated in a mixture of olive oil, fresh lime juice and zest, cilantro, and warm spices including cumin. The marinade tenderizes the chicken and infuses it with bright citrus and herb flavors. Cooking on a medium-high grill develops a slightly charred exterior while keeping the inside juicy.

Description

Grilled Cilantro Lime Chicken combines fresh lime juice and zest with chopped cilantro and spices to create a vibrant marinade for boneless, skinless chicken breasts. The chicken is first pounded to an even thickness to ensure even grilling. After marinating for at least 30 minutes, the chicken is grilled over medium-high heat until cooked through and rested before serving. This method yields chicken with a juicy center and a subtly tangy, herbaceous crust enhanced by the toasted cumin and black pepper.

The flavor balance between the tart lime and earthy cilantro, along with a touch of sugar, gives the chicken a refreshing brightness. Grilling imparts a lightly smoky char that complements the marinade's citrus notes. This chicken pairs well with side dishes like rice, grilled vegetables, or a fresh salad.
