Grilled Corn Salad Recipe with BBQ Sausage
Description
The salad features grilled corn and farmer-style sausage cooked over medium-high heat to develop smoky char. The grilling process caramelizes the corn kernels and browns the sausage, adding texture and flavor. Once cooled, the corn is cut from the cob and combined with red and orange diced bell peppers, thinly sliced red onion, halved cherry tomatoes, and diced avocado for a variety of fresh, crunchy, and creamy textures.
The dressing is a blend of citrus juices from orange and lime, vegetable oil, chopped cilantro and mint, balanced with honey and a smoky adobo sauce. This dressing provides brightness and herbaceous notes that complement the hearty ingredients. Tossing the salad together ensures an even coating of flavors throughout.
This salad is practical for gatherings because it holds well for over an hour without losing quality and can be made ahead. It pairs well with grilled meats or can stand on its own as a vibrant vegetable dish with added protein from the sausage.
Ingredients
The Salad
- 3 cobs corn
- 1 lb sausage sliced in half lengthwise, farmer's style
- 1 teaspoon vegetable oil
- 1 medium red pepper diced
- 1 medium orange bell pepper diced
- ¼ cup red onion thinly sliced
- ½ cup cherry tomato halved
- 1 large avocado diced
The Dressing
- 2 tablespoons orange juice from ¼ orange
- 2 tablespoons lime juice from 1 lime
- 2 tablespoons vegetable oil
- 2 tablespoons cilantro finely chopped
- 2 tablespoons mint finely chopped
- 1 teaspoon adobo sauce from a jar of chipotle peppers
- 1 teaspoon honey
- salt to taste, sea salt
- black pepper to taste, sea salt
Instructions
- Preheat your BBQ to medium-high. Lightly coat the cobs of corn and farmer sausage in the vegetable oil. Place them both on the BBQ and grill for 10 minutes, turning the sausage once and the corn a few times. Remove them both from the grill and let them cool slightly.
- While the corn and sausage cook, make the rest of the salad. Place all the dressing ingredients into a small bowl and mix well.
- Add the red and orange peppers, red onion, and cherry tomatoes to a large bowl.
- Chop the sausage into bite-sized pieces. Hold the corn on end on a plate and cut the corn kernels off by sliding a sharp knife down the side of the cob.
- Add the corn, diced sausage, and avocado to the bowl with the vegetables. Pour the dressing over the top and toss to coat.
Notes
- This salad can sit for at least an hour without losing its texture or flavor, making it suitable for BBQ parties.
- Using a smoked farmer-style sausage like Grimm's adds a distinctive flavor to the dish.
