Grilled Corn Salad with Cotija

A grilled corn salad featuring charred corn kernels tossed with scallions, crumbled Cotija cheese, fresh cilantro, and a zesty Tajin seasoning. The salad balances smoky, tangy, and salty flavors, making it a vibrant side dish that highlights the natural sweetness of the corn. Served with optional lime wedges, it brings a bright touch ideal for summer meals or barbecues.

Description

The Grilled Corn Salad with Cotija combines fresh corn grilled until it has a lightly charred surface, enhancing its sweetness with a smoky note. The salad mixes the corn kernels with scallions and crumbled Cotija cheese, which contributes a salty, crumbly texture. Tossed with olive oil, chopped cilantro, and Tajin seasoning, this salad offers a flavorful combination that's tangy and slightly spicy. The grilling step adds depth to the corn, while the Tajin provides a chili-lime accent that complements the crumbly cheese well.

This salad works well as a fresh side dish for grilled meats or as part of a casual cookout spread. The optional lime wedges can be squeezed over the top to add brightness and a bit of acidity, balancing the richness of the Cotija cheese. The simple assembly keeps the focus on the quality of the ingredients and the charred flavor from grilling.
