Grilled Lemongrass Beef Skewers marinate flat iron steak strips in a blend of lemongrass, ginger, garlic, soy sauce, chili garlic sauce, and fish sauce, creating a fragrant and savory meat ready to be charred over high heat. The skewered grilling results in tender beef with charred edges and a balanced blend of aromatic, sweet, and spicy flavors.

Description

Thin slices of flat iron steak are coated with a marinade containing sugar, finely chopped lemongrass, grated fresh ginger, soy sauce, fish sauce, neutral oil, chili garlic sauce, minced garlic, and kosher salt. The beef soaks in these ingredients, absorbing the sweet, tangy, and spicy notes associated with lemongrass and Southeast Asian flavors.

After marinating from 30 minutes up to 12 hours, the beef strips are threaded accordion-style onto skewers and grilled over high heat until golden brown and charred in spots. This grilling technique seals in juices while giving a smoky, caramelized crust.

The finished skewers are rested briefly and garnished with chopped salted peanuts and fresh cilantro. They can be served as-is or accompanied by peanut sauce for additional richness.

  • 3 tablespoons sugar
  • 2 tablespoons lemongrass finely chopped
  • 1 tablespoons ginger finely grated fresh
  • 1 tablespoon soy sauce
  • 2 teaspoons fish sauce
  • 1 tablespoon sunflower oil or other neutral flavored oil
  • 1 ½ teaspoons Chili garlic sauce
  • 3 garlic medium cloves
  • 1 teaspoon kosher salt
  • 1 ½-2 pounds flat iron steak see post for substitution
  • peanuts for garnish, chopped, salted
  • cilantro for garnish, chopped, fresh
  • peanut sauce if desired

Instructions

  1. Combine the sugar, lemongrass, ginger, soy sauce, fish sauce, oil, chile garlic sauce, garlic and kosher salt in a medium size bowl. Stir until sugar dissolves.
  2. Slice beef into ¼-inch slices (crosswise) and add to marinade mixture in the bowl. Toss to coat beef well with marinade. Cover and refrigerate for at least 30 minutes and up to 12 hours.
  3. When ready to cook, heat grill to high. (You should be able to hold your hand 1 to 2 inches above the grate for only 2 to 3 seconds). Oil grates with cooking spray or oil.
  4. Drain beef and discard the marinade. Thread 4-5 beef strips onto each skewer, accordion style.
  5. Place the skewers on the grill. Cook, turning every couple minutes until golden brown and charred in places, about 10-12 minutes total. Do not cover grill while cooking skewers.
  6. Remove from grill and tent with foil for 4-5 minutes. Sprinkle with chopped peanuts and cilantro for garnish. Serve with Peanut Sauce, if desired.
