Grilled Mexican Street Corn

Grilled Mexican Street Corn features fresh corn on the cob grilled until lightly charred, then coated with a mix of mayonnaise and sour cream, rolled in Cotija cheese, sprinkled with chili powder, and finished with a squeeze of lime. This creates a contrast of smoky, creamy, tangy, and slightly spicy flavors with a creamy and crumbly texture from the cheese.

Description

This recipe for Grilled Mexican Street Corn starts by soaking peeled corn cobs to keep them moist, then grilling them over medium heat until browned on all sides. After grilling, the corn is brushed generously with a mayonnaise and sour cream mixture that adds creamy tanginess.

Next, the corn is rolled in Cotija cheese, which imparts a salty, crumbly texture similar to feta. A sprinkle of chili powder adds mild heat and a smoky element, rounded out by fresh lime juice that cuts through the richness.

The corn is served immediately while warm, perfect as a side dish or snack offering a mix of textures from the tender grilled corn kernels, creamy dressing, and crumbly cheese topping. Variations can substitute sour cream with Greek yogurt or Cotija with feta for accessibility, and chili heat can be adjusted using cayenne pepper.
