Grilled Moroccan Vegetable Skewers
Description
Grilled Moroccan Vegetable Skewers feature a colorful mix of zucchini, bell peppers, yellow onion, and mushrooms, all sliced to uniform sizes for even cooking. The vegetables are soaked in a marinade made from olive oil, fresh lemon juice, garlic, and a Moroccan-inspired spice mix including ground coriander, cumin, sweet paprika, and chili powder. Fresh parsley and cilantro add a herbaceous brightness without pureeing the mixture, maintaining texture in the marinade.
After marinating for several hours, the vegetables are assembled onto soaked wooden skewers and grilled over medium-low heat. Turning the skewers regularly ensures even cooking and gentle char, softening the vegetables without burning them. The result is a tender, flavorful skewer with vibrant taste from the marinade.
These skewers work well as a side dish or a light main, paired with grains or flatbreads, capturing subtle spice and freshness characteristic of Moroccan flavors.
Ingredients
Vegetables you'll need:
- 2 zucchini green or yellow, sliced into 1/3" rings, medium
- 2 bell peppers cut into 1" pieces, medium
- 1 yellow onion sliced and separated into 1" pieces, or sweet onion, large
- 1 lb mushroom rinsed and dried on paper towels, small-ish
- 10 wood skewer soaked at least 30 minutes in water, large
Marinade Ingredients:
- 4 Tbsp olive oil
- 4 Tbsp lemon juice fresh
- 3 garlic cloves
- 1 tsp ground coriander
- 1/4 tsp cumin ground
- 1 tsp paprika sweet
- 1/8 tsp chili powder
- 1/2 Tbsp salt
- 1/2 tsp black pepper ground
- 1/2 parsley bunch, fresh
- 1/2 cilantro bunch fresh
Instructions
How to Make the Moroccan Marinade:
- Put all ingredients into the food processor except for the cilantro, parsley and veggies. Pulse the marinade 5-7 times to mince the garlic.
- Next, add cilantro and parsley then pulse a few more times until your cilantro and parsley look chopped (your veggies will look nicer if you don't puree your marinade.
Assembling the Skewers:
- Rinse, dry and slice all of your veggies, then transfer them to a large bowl or 1 gallon zip-loc bag.
- Pour marinade over your veggies and toss to combine and coat veggies evenly with marinade. Refrigerate for 4 hours to marinate.
- Preheat your grill. Skewer your veggies on your wet skewers just so the veggies are touching each other; no need to pack them together.
- Use a grill brush to oil the grill (it keeps the veggies from sticking). Grill over medium/low heat, turning every few minutes for even grilling. Grill until veggies are soft (about 15 minutes).
