Grilled Mushrooms Recipe
Description
This recipe begins by marinating button mushrooms in a blend of balsamic vinegar, soy sauce, and half of the minced garlic. The marinade tenderizes the mushrooms and imparts a balance of acidity and umami. After marinating for 30 minutes at room temperature, the mushrooms are skewered on flat kebab sticks to prevent spinning during grilling.
Next, the remaining garlic is gently cooked in melted butter with a pinch of salt to create a fragrant garlic butter drizzle. The mushrooms are grilled over a medium-hot barbecue for about five minutes per side, developing grill marks and caramelizing their natural sugars. Once grilled, they are plated and topped with the warm garlic butter for an added layer of richness and aroma.
The grilled mushrooms can be served immediately while warm, making a flavorful accompaniment to grilled meats or as a tasty vegetarian option on their own. The marinade and butter enhance the mushrooms' earthiness and create a pleasing contrast between tangy, salty, and buttery notes.
Ingredients
- 2 tablespoons balsamic vinegar
- 1 tablespoon soy sauce gluten-free if needed
- 4 cloves garlic very finely minced, divided
- 2 lb button mushrooms cut in half
- 2 tablespoons butter
- salt a generous pinch
Instructions
- In a large bowl, mix the balsamic vinegar, soy sauce, and half the garlic. Add the mushrooms and gently toss the mushrooms so they are coated in the marinade. Set aside on your counter for 30 minutes.
- In a small saucepan, melt the butter and add the remaining garlic and a pinch of salt.
- Oil your barbecue grill and preheat to medium. Skewer the mushrooms on kebab sticks. (See notes.)
- Grill the mushrooms for 5 minutes per side. When you flip them over, it is easiest to use two pairs of tongs. Set the grilled mushrooms on a plate and drizzle the garlic butter over the top. Serve immediately.
Notes
- Use flat skewers to keep mushrooms stable and prevent rotation when flipping on the grill.
- Marinate mushrooms for at least 30 minutes to absorb the balsamic and soy flavors.
- Serve grilled mushrooms right after cooking to enjoy their tender texture and warm garlic butter infusion.
