Grilled Peach Flatbread with Goat Cheese and Balsamic Reduction

The perfect vegetarian summer dinner, this grilled peach flatbread topped with goat cheese and balsamic reduction is sweet, salty and super scrumptious!

Ingredients
- ½ cup balsamic vinegar
- 1 tsp butter
- 2 shallot peeled and diced
- ½ tsp sugar
- 1 flatbread large
- 2 tbsp olive oil
- 2 peach peeled, pitted and sliced, fresh
- ¼ cup goat cheese crumbled
- 2 tbsp basil chopped, fresh
Instructions
- Add the balsamic vinegar to a small skillet over high heat.
- Bring to a boil, reduce heat then allow the vinegar to cook down to ¼ cup.
- In a separate skillet, add the butter over medium heat.
- Once the butter begins to melt and bubble, add the diced shallots.
- Sauté for 3-4 minutes, then add the sugar.
- Caramelize for an additional 2-3 minutes, then remove from the heat.
- Brush the flatbread with olive oil, top with peaches, caramelized shallots, goat cheese and basil.
- Drizzle with the balsamic reduction.
- Place on the grill over medium heat for 10-12 minutes.
