  • 4 peach ripe, halved and pitted
  • olive oil for brushing the peaches

  • cinnamon brown sugar topping
  • 1-2 tablespoons butter melted, salted
  • 1-2 tablespoons brown sugar
  • ½ teaspoon cinnamon
  • brown butter salted
  • Ice cream salted
  • vanilla ice cream
  • 1-2 tablespoons butter browned
  • lemon
  • ricotta
  • pistachio
  • ricotta cheese
  • lemon zest
  • salt to taste
  • pistachios chopped, roasted
  • honey drizzle
  • basil or arugula
  • yogurt breakfast version
  • granola breakfast version
  • vanilla Greek yogurt or plain

Instructions

  1. Preheat your grill to medium high heat or about 400 degrees F.
  2. Brush peach halves with olive oil to prevent them from sticking to the grill. *For the Cinnamon Brown Sugar topping: mix the butter, brown sugar and cinnamon together and spread over peaches before grilling.Place peach halves flesh-side down on the grill and cook for 3-4 minutes or until grill marks form. Only grill one side until the peaches are slightly juicy.
  3. Remove peach halves from the grill and serve with your desired toppings.**For the Lemon Ricotta Pistachio topping: mix lemon, ricotta and salt together, then place on grilled peaches and top with pistachios, a drizzle of honey, and basil OR a few arugula pieces.This serves 4, but feel free to double the recipe or cut in half for a smaller serving. Enjoy!
