Grilled pineapple ice cream
Description
Grilled Pineapple Ice Cream highlights fresh pineapple grilled until tender and lightly marked, then pureed with cream, milk, and sugar to create a luscious base. The grilling process softens the pineapple and introduces subtle smoky notes that cut through the rich dairy, giving the ice cream a balanced flavor. Whether churned in an ice cream maker or frozen in a container with periodic stirring, this recipe yields a creamy frozen dessert that retains pineapple's tropical brightness.
The recipe requires advancing the pineapple grilling and freezing step ahead of time, which helps in achieving smoothness when blended. Blending the chilled pineapple with cream, milk, and sugar allows the sweetness and creaminess to meld, making the final texture soft but scoopable. This recipe suits those wanting to enjoy a tropical flavored ice cream with minimal ingredients and straightforward preparation.
Ingredients
- 110 g pineapple weight without skin, approx 1 1 in slice, ¾ cup when chopped, fresh
- ½ cup heavy cream 120 ml double cream
- ½ cup milk 120 ml
- 2 tablespoon sugar
Instructions
Ahead of time
- Grill the peeled slice of pineapple for approximately 4 minutes a side until it shows light grill marks and softens. Set aside to cool then put in a freezer bag and freeze (you can chop before freezing)
When ready to make
- Put the pineapple, in chunks, in a blender along with the cream, milk and sugar. Blend for a couple minutes until smooth. Transfer to an ice cream maker and follow instructions to chill, or put in a container and transfer to the freezer, stirring after each 30 minutes until frozen then serve.
