  • 1 lb salmon cut into cubes
  • ¼ cup olive oil extra virgin
  • 1 lemon juice of
  • 1 teaspoon cumin
  • ½ teaspoon Coriander
  • 1 teaspoon paprika
  • ½ teaspoon Turmeric
  • ½ teaspoon salt
  • ½ teaspoonn black pepper
  • onion to grill
  • bell pepper to grill

Instructions

  1. Place the salmon cubes in a large bowl. 
  2. In another bowl, mix olive oil, lemon juice, cumin, coriander, paprika, turmeric, salt, and pepper. 
  3. Drizzle over salmon pieces and stir well until fully mixed. 
  4. Cover and marinade in the fridge for 30 minutes.
  5. Heat the grill and start threading the salmon and veggies on skewers. 
  6. Grill over medium high heat for 5 minutes on each side. 

Notes

  • Serve with side dishes like brown rice, Greek potatoes, Mediterranean couscous salad, or Middle Eastern eggplant for a full meal.
  • For oven cooking, broil the kabobs on high about 5 inches below the broiler for 5 minutes per side until done.
  • On stovetop, use a grill pan over medium heat, lightly brushed with olive oil, cooking about 4-5 minutes per side on the skewers.
