Grilled Salmon Shish Kabobs
Description
Salmon is cut into cubes and marinated for 30 minutes in extra virgin olive oil, fresh lemon juice, and warm spices like cumin, coriander, paprika, and turmeric, with salt and black pepper for seasoning. The marinade infuses citrus and earthiness into the fish.
The salmon cubes are then skewered alternately with onion and bell pepper pieces and grilled over medium-high heat for about five minutes per side until the salmon is cooked but still moist and flaky. The grilling imparts a slightly charred flavor and juicy texture.
This dish pairs well with Mediterranean or Middle Eastern side dishes such as instant pot brown rice, Greek-style potatoes, couscous salad, or grilled eggplant. The recipe also suggests using an oven broiler or stovetop grill pan as alternatives to outdoor grilling, maintaining similar cooking times and achieving a cooked through, lightly charred finish.
The combination of spices adds warmth and complexity without overpowering the natural salmon flavor, making these kabobs a versatile and well-rounded grilled seafood option.
