Grilled Sweet Cajun Chicken Recipe
Description
The recipe uses a marinade made from olive oil, Cajun seasoning, and brown sugar. The poultry is sliced horizontally to increase surface area for marinating, then soaked for at least 30 minutes and up to 24 hours, allowing the flavors to penetrate and the chicken to tenderize.
Cooking occurs over a hot grill or pan, with each side grilled for 3-4 minutes, quickly developing a cooked-through yet juicy texture with a caramelized exterior. The balance of spicy seasoning and the sweetness from the brown sugar provides complex flavor.
This chicken works well as a main course accompanied by sides or as part of a sandwich or salad. It is a straightforward method that adds depth with the Cajun spice blend.
If the Cajun seasoning lacks salt, adding it to the marinade enhances flavor. Marinated chicken can be frozen for up to six months, and it continues to tenderize while defrosting.
Ingredients
- ¼ cup olive oil
- 3 tablespoon cajun spice blend - see note 1
- 2 tablespoon brown sugar
- 2 chicken breast large
Instructions
- In a zip lock bag or non-reactive container, combine the olive oil, cajun seasoning and brown sugar. Squish the bag or stir the container until well combined.
- Place the chicken breasts flat on a chopping board and keeping your knife parallel to the chopping board cut horizontally straight through the chicken breast. Repeat with the second chicken breast.
- Add the chicken breasts to the marinade and place in the fridge for at least 30 minutes but 12-24 hours is best (see note 2 for freezer instructions)
To cook the chicken
- Get the grill hot. Or if you are using a frying pan place it over medium-high heat.
- Remove the chicken from the marinade and cook for 3-4 minutes on one side then flip and cook for a further 3-4 minutes until cooked through.
Notes
- Add 1 teaspoon salt to the marinade if your Cajun seasoning does not contain salt.
- Marinated chicken can be frozen for up to six months and will continue tenderizing as it defrosts.
