Grilled Tilapia In Foil

Grilled Tilapia in Foil features tender tilapia fillets cooked with corn, bell peppers, onions, and lemon slices, all seasoned with a simple spice blend of garlic powder, onion powder, oregano, kosher salt, and black pepper. The fish and vegetables are sealed in foil packets and grilled, allowing the flavors to meld and the steam to cook the fish gently. This method results in moist and flaky tilapia with tender vegetables, easy to prepare on an outdoor grill.

Description

Grilled Tilapia in Foil is a method of cooking where tilapia fillets are combined with corn pieces, bell peppers, and onion quarters. The fish is seasoned with a spice mix of garlic powder, onion powder, oregano, kosher salt, and black pepper, then topped with lemon slices and olive oil. The ingredients are sealed tightly in aluminum foil packets and cooked on a medium-high grill for about 12 minutes until the fish flakes easily and is opaque throughout.

The sealed foil helps keep the moisture, steaming the fish alongside the vegetables and lemon, imparting a fresh, mildly aromatic citrus note paired with the herbaceous and savory spice mix. This technique keeps the fish tender and flavorful while allowing the vegetables to soften but retain some texture.

This grilled tilapia dish can be served immediately off the grill and pairs well with simple sides such as rice or a fresh salad. It’s a practical choice for a quick outdoor meal and can be scaled up easily for groups.

You can customize the spice mix with paprika, turmeric, sumac, or chili flakes and use other types of white fish like mahi mahi or cod. Leftovers can be stored airtight and reheated in the oven at low temperature to retain moisture without overcooking.

Ingredients

Servings
  • 4 pieces tilapia fillets
  • 1 ear corn cut into 4 pieces
  • 2 red bell pepper cut into chunks, or orange bell pepper
  • 1 onion cut into quarters
  • 2 lemon sliced, plural
  • 2 tbsp olive oil

Spice mix

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat the grill to medium high. Place 4 pieces of aluminum foil on the counter and coat them with cooking spray. Make the spice mix by combining all the spices in a small bowl.
  2. Place one piece of fish on the aluminum foil and top it with your vegetables of choice. Top everything with your spice mix, lemon slices and olive oil.
  3. Bring the long sides of the foil together and seal. Then fold the short sides and seal as well. Place the foil packets on the grates and grill for 12 minutes. The fish is cooked once it's opaque and flakes easily using a fork.

Notes

  • Use either fresh or fully thawed frozen tilapia for best results.
  • Try adding spices like paprika, turmeric, sumac, or chili pepper flakes to adjust the flavor profile.
  • Grilled tilapia is best served immediately, but leftovers can be reheated in a 300°F oven for 15 minutes until warm.
  • This recipe can be easily doubled or tripled to serve more people.
  • Other white fish such as mahi mahi or cod can also be used, but adjust cooking time accordingly.
