Grilled Turkey Kofta Skewers with Yogurt Sauce

Grilled Turkey Kofta Skewers combine ground turkey blended with grated onion, fresh mint and parsley, garlic, and warm spices like coriander, cinnamon, allspice, and cayenne. The meat is shaped onto skewers and grilled until caramelized and cooked through. Served alongside a cooling yogurt sauce flavored with mint, lemon, and garlic, this dish is aromatic and balanced.

Description

The kofta mixture includes ground turkey mixed gently with grated onion, chopped herbs, garlic, kosher salt, coriander, cinnamon, allspice, and a hint of cayenne pepper. The mixture is chilled briefly, then portions are shaped into oval logs on soaked skewers to prepare for grilling.

Cooking over medium-high heat, the skewers develop grill marks and caramelization while remaining moist inside. The accompanying yogurt sauce is made by combining Greek yogurt, chopped mint, lemon juice, pressed garlic, and salt, providing a bright and creamy counterpart to the spiced meat.

This dish offers a flavorful grilled protein option suitable for a main course or appetizer. The yogurt sauce adds freshness and balances the savory, spiced flavors. Using soaked skewers helps prevent burning, and moderate grilling preserves juiciness.

Ingredients

Servings
  • For the Kofta
  • 1 pound ground turkey Plainville Farm brand
  • onion about ½ small onion, scant ⅓ cup, grated
  • 2 parsley chopped, sprigs
  • 2 mint leaves chopped, sprigs
  • 1 clove garlic , minced or pressed
  • 2 teaspoons kosher salt
  • 1 teaspoon ground coriander
  • ½ teaspoon ground cinnamon
  • ½ teaspoon allspice
  • teaspoon cayenne pepper
  • extra-virgin olive oil or grape seed oil
  • For the Yogurt Sauce
  • 1 cup Greek yogurt non-fat
  • 3 tablespoons mint chopped, leaves
  • ½ lemon , juiced
  • 1 clove garlic , pressed
  • Pinch kosher salt

Instructions

  1. For the Kofta Skewers
  2. In a medium bowl, gently combine the turkey with the grated onion, chopped herbs, garlic, kosher salt, coriander, cinnamon, allspice and cayenne pepper. Wet your hands and scoop about ⅓ cup of the meat into your hands and shape into oval shaped logs. Place on a sheet pan or plate covered with parchment paper and refrigerate for about 30 minutes.
  3. If using wooden skewers, soak the skewers in cold water for 15 min to ½ hour. Heat the grill to medium-high heat and oil the grate. Grill the skewers for about 5-6 minutes, turning occasionally so that grill marks form. Reduce the heat and cook the skewers for another 5-8 minutes or until they begin to caramel in color and the meat is cooked through.
  4. For the Yogurt Sauce
  5. Mix the ingredients together in a small bowl. Refrigerate until ready to use.
