Grilled Yuca with Garlic Mojo Sauce
Description
This recipe prepares yuca (cassava) by peeling and boiling it in salted water until fork tender without becoming mushy. After draining and cooling, the yuca is cut into strips with the central vein removed. Grilling these strips on indirect heat after brushing them with a garlic mojo sauce crisps the exterior while maintaining a soft interior texture.
The mojo sauce combines minced onion and garlic, parsley, cilantro, hot sauce, red wine vinegar, and vegetable oil, seasoned with salt and pepper to create a tangy, savory marinade and dip. The grilling method adds a smoky, crisp layer to the earthy, starchy yuca roots, balancing texture and flavor.
This dish can be served warm with additional mojo sauce on the side for dipping, offering a satisfying snack or side. If grilling is unavailable, the yuca can also be baked at higher heat until crisped. Adjusting hot sauce quantity tailors the spice level within the sauce.
