Description

Ingredients
- 2 ½ cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 ½ cups white sugar
- 2 large egg
- ⅓ cup butter softened
- 2 teaspoon vanilla extract
- ½ teaspoon peppermint extract

- white sugar or powdered sugar for rolling
Instructions
- Preheat oven to 375° F and line a baking sheet with parchment paper.
- In a medium mixing bowl, add the flour, baking powder and salt and mix together.
- In a separate large mixing bowl, add the butter and sugar and beat on medium speed with an electric mixer. (you can also use the bowl of a stand mixer)
- Add the vanilla and peppermint extracts and eggs one at a time, blending after adding.
- Then add in the dry ingredients gradually ½ cup at a time, blending after each addition until just barely incorporated. (careful not to overmix)
- Add a few drops of food coloring and knead the dough to incorporate the color fully.
- Place white sugar on a small plate or in a shallow bowl.
- With a cookie scoop, scoop approximately tablespoon size scoops, roll into a ball and then roll in the white sugar (or powdered sugar) to coat thoroughly.
- Place on lined baking sheet and press gently to flatten slightly.
- Press a heart-shaped candy sprinkle into the center of each dough ball.
- Bake for 8 minutes or until the bottoms are very slightly golden brown.
- Allow to cool on the baking sheet for 2 minutes then transfer to a wire rack to cool completely.
