Ingredients

  • 2 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 ½ cups white sugar
  • 2 large egg
  • cup butter softened
  • 2 teaspoon vanilla extract
  • ½ teaspoon peppermint extract
  • green food coloring
  • white sugar or powdered sugar for rolling

Instructions

  1. Preheat oven to 375° F and line a baking sheet with parchment paper.
  2. In a medium mixing bowl, add the flour, baking powder and salt and mix together.
  3. In a separate large mixing bowl, add the butter and sugar and beat on medium speed with an electric mixer. (you can also use the bowl of a stand mixer)
  4. Add the vanilla and peppermint extracts and eggs one at a time, blending after adding.
  5. Then add in the dry ingredients gradually ½ cup at a time, blending after each addition until just barely incorporated. (careful not to overmix)
  6. Add a few drops of food coloring and knead the dough to incorporate the color fully.
  7. Place white sugar on a small plate or in a shallow bowl.
  8. With a cookie scoop, scoop approximately tablespoon size scoops, roll into a ball and then roll in the white sugar (or powdered sugar) to coat thoroughly.
  9. Place on lined baking sheet and press gently to flatten slightly.
  10. Press a heart-shaped candy sprinkle into the center of each dough ball.
  11. Bake for 8 minutes or until the bottoms are very slightly golden brown.
  12. Allow to cool on the baking sheet for 2 minutes then transfer to a wire rack to cool completely.

  • Use large heart-shaped candy sprinkles as a decorative topping; alternatives can be used if desired.
