Ingredients
- 2 cups granulated sugar
- ¾ cup heavy cream
- ¾ cup unsalted butter
- pinch of salt
- 1 bag white chocolate morsels 11 ounce
- 1 jar marshmallow cream 7 ounce
- 1 teaspoon peppermint extract
- 1 drop Green Gel Food Coloring
- green sugar and red heart sprinkles for garnish
Instructions
- Prepare an 8-inch square baking dish by lining it with parchment paper. Set aside.
- Add white chocolate morsels, marshmallow cream, peppermint extract, and green gel food coloring to a large mixing bowl. Set aside.
- In a large, heavy saucepan, add butter, cream, sugar and salt. Bring to a boil over medium high heat, stirring frequently. Once boiling, continue to boil for a full 4 minutes, stirring constantly. Remove from heat and pour over white chocolate mixture. Using an electric mixer, blend for about one minute, until morsels are melted and mixture is smooth.
- Pour mixture into prepared baking dish. Immediately add green sugar and red heart sprinkles to the top, pressing them gently into the fudge. Refrigerate for two hours (or overnight).
- Once set, cut into bite sized pieces and store in an airtight container at room temperature for two weeks. For freshest fudge, only cut as needed, keeping the large chunk of fudge in a ziploc bag until ready to eat.
Notes
- No need to chill this fudge, unless you prefer the taste of it cold. Mine firmed up well at room temperature within a few hours.
- No candy thermometer needed! That’s one of the reasons I love this kind of fudge recipe. Just boil for 4 minutes and it’ll reach the correct temperature.
- Grinch Peppermint Fudge tastes best if enjoyed within 1 to 2 weeks. It stays freshest when you slice only the amount that you will be serving (or eating) immediately.
