Grinder Salad
Description
The Grinder Salad is built on a fresh mix of shredded iceberg lettuce and thinly sliced Brussels sprouts, providing crispness and slight bitterness. Slices of salami, deli ham, and provolone cheese add richness and protein. Red onion and grape tomatoes contribute sharpness and sweetness, while pepperoncini peppers bring acidity and mild heat. The red pepper flakes garnish can be used to increase spice level.
The dressing is a key component, combining mayonnaise, red wine vinegar, kosher salt, black pepper, Italian seasoning, minced garlic, pepperoncini pepper liquid, and grated Parmesan cheese. The result is a creamy, tangy sauce with herbal notes and depth from the cheese. Tossing the dressing with the salad melds the components into a balanced dish that pairs crunchy fresh vegetables with salty meats and cheeses.
Prepared chilled and served immediately, this salad works well as a hearty side or light main course. The recipe suggests gently tossing ingredients with the dressing so the crunchy textures remain distinct and the flavors well distributed.
