Ingredients

Servings
  • 1 1/2 to 2 pounds ground beef 80/20
  • 1 medium white onion diced, or yellow onion
  • 2 teaspoons chili powder
  • 2 teaspoons paprika
  • 1 teaspoon cumin ground
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup salsa fresh or jarred

For Serving (Mix and Match Toppings)

  • 12 (8-inch) flour tortillas
  • 2 medium Roma tomato diced
  • 1 medium jalapeño sliced or diced
  • 1 cup lettuce shredded
  • 1/2 cup cheddar cheese shredded
  • 1/2 cup sour cream
  • 1/2 cup cilantro chopped, fresh
  • 1/4 cup red onion diced
  • 1/4 cup olives sliced

Instructions

  1. Heat a large skillet over medium-high heat.
  2. Add 1 1/2 to 2 pounds ground beef. Use a spatula to break up the meat and cook for 3 to 4 minutes, until it releases juices and starts to brown.
  3. Add 1 medium white or yellow onion (diced), 2 teaspoons chili powder, 2 teaspoons paprika, 1 teaspoon ground cumin, 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon salt, and 1/4 teaspoon cayenne pepper. Stir to combine.
  4. Continue cooking for 7 to 10 minutes, stirring occasionally, until the beef is fully cooked and the onion is softened. Drain excess grease, leaving 1 to 2 tablespoons for added flavor.
  5. Add 1/2 cup salsa, stir, and let simmer for 2 to 3 minutes to create a flavorful sauce.
  6. Serve hot on 12 (8-inch) flour tortillas with desired toppings.

Notes

  • An 80/20 blend ground beef is your most flavorful option.  It's okay to leave a tablespoon or two of grease in your tacos to add more flavor.
  • Instead of using the recipe's blend of taco seasoning spices, you can replace it with a 1-ounce taco seasoning packet, or 2 tablespoons from a jar.
