Description

Ground Beef Teriyaki Ramen begins by browning ground beef in a skillet, then adding garlic and ginger for aromatics. The sauce of white wine (often sake), sugar, mirin, and light soy sauce simmers until it reduces by half, intensifying the flavors.

Partially cooked ramen noodles and steamed broccoli are blended into the skillet to absorb the sauce and combine textures. Steaming broccoli separately ensures it retains crispness and color.

This dish offers a hearty noodle bowl with umami-rich beef and sweet-savory sauce. Serving it right after tossing maintains the tender noodles and fresh broccoli texture. Optional sesame seeds add a subtle nutty accent.

  • 1 pound ground beef 85/15
  • 2 tablespoons garlic minced
  • 1 tablespoon ginger minced
  • 1/4 cup white wine (I use Sake, but this can be hard to source)
  • 1/4 cup sugar
  • 1/2 cup mirin
  • 1/2 cup soy sauce light
  • 2 ramen noodles discard the seasoning packet, packets
  • 8 ounces broccoli florets
  • sesame seeds optional

Instructions

  1. Brown the ground beef in a heavy bottomed skillet on medium-high heat until cooked through (roughly 6-8 minutes).
  2. Add in the garlic and ginger, cook for an additional 1-2 minutes, stirring frequently.
  3. Add in the white wine, sugar, mirin and soy sauce.
  4. Let reduce on medium heat for 6-8 minutes or until reduced by half the volume.
  5. While the sauce is reducing cook the ramen for 1 minute shy of the instructions in a microwave safe bowl.
  6. Steam your broccoli slightly in the microwave for 1-2 minutes in a covered microwave safe bowl.
  7. Add the ramen and broccoli to the skillet and toss together before serving.
  8. Garnish with sesame seeds if desired.
