Ingredients

Servings

For the Sauce

  • ½ cup chicken broth low sodium
  • 1 tablespoon cornstarch
  • ¼ cup soy sauce low sodium
  • 1 tablespoon mirin
  • 3 tablespoons honey or more
  • 3 tablespoons sriracha or more
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

For the Stir Fry

  • 2 tablespoons neutral cooking oil divided, generic cooking oil
  • 4 cups broccoli florets
  • 1 pound ground chicken
  • 3 green onions sliced, both white and green parts
  • 1 cup peas or more, frozen

Instructions

  1. Mix together the chicken broth and cornstarch in a small mixing bowl then add the rest of the sauce ingredients. Mix until well combined. Set aside.
  2. Heat a tablespoon of oil in a large skillet over medium heat. Add the broccoli and saute for 3 to 4 minutes or until almost fully cooked through. Set aside.
  3. Heat another tablespoon of oil over medium heat in the emptied skillet and add the ground chicken. Cook for 2 to 3 minutes, making sure to break up the pieces, until 70 to 80% cooked.
  4. Add the green onions and give them a quick 1 minute saute before adding the sauce to the skillet.
  5. Allow the sauce to simmer for 1 to 2 minutes, making sure to continue breaking up any large pieces of ground meat.
  6. Add the peas and broccoli and mix well until everything is evenly coated with sauce. Cook for another 2 to 3 minutes or until the sauce has thickened to your liking.
  7. Serve with your side of choice and garnish with more green onions and sesame seeds if desired.
