Ground Chicken Kebab
Description
The preparation involves mixing ground chicken with finely chopped onion, a blend of spices for warmth and depth, yogurt to add moisture and tenderness, and flour to hold the kebab together. Resting the mixture in the fridge for at least 20 minutes helps the spices develop and firms up the mixture for shaping.
Shaped into ping pong ball-sized flattened patties, these kebabs can be cooked in various ways including oven baking at 350°F, pan frying on a lightly oiled surface, grilling, or air frying. Each method ensures the kebabs cook through while maintaining a slightly crisp exterior and juicy interior. The seasoning and yogurt provide a balanced and savory flavor with mild heat if chili powder is included.
These kebabs serve well with complementary yogurt or chili dips made from simple fresh herbs, tomatoes, and spices, enhancing their fresh and vibrant profile. The versatility in cooking methods and dips allows easy adaptation to home kitchens and taste preferences.
Ingredients
- 1 ⅓ pounds ground chicken minced
- 1 medium-sized brown onion finely chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- ½ teaspoon black pepper coarse
- 1 teaspoon salt pr according to taste
- ½ teaspoon chili powder optional, or more
- 2 tablespoons yogurt
- 3 tablespoons plain flour
Instructions
- Put all the ingredients in a bowl. Mix and knead it well. Cover with cling film and leave it to rest in the fridge for at least 20 minutes. So the flavour will develop better.
- Shape the chicken meat into balls about a ping pong ball size, then flatten them.
- If you cook them in the oven, you can arrange the patties on the lightly sprayed with oil baking tray. Then cook the meat at gas 4/ 350° F/ 180° C for about half an hour or until the kebabs are cooked through.
- If you cook the meat on the griddle pan, you can spray the pan with a little bit of oil. Cook the patties on each side for about 6-7 minutes. Until the meat is cooked through.
- You can also cook the chicken kebabs in the air fryer if you want. It normally takes me about 10 minutes at 350° F/180°C to cook a batch of chicken patties in my air fryer.
- Last but not least, you can cook the meat on the barbecue according to however you like.

Notes
- Rest the spiced chicken mixture in the fridge at least 20 minutes to enhance flavor and firmness.
- Cook the kebabs by baking at 350°F for about 30 minutes, pan-frying 6-7 minutes per side, air frying for 10 minutes at 350°F, or grilling.
- For a yogurt dip, mix natural yogurt with minced mint and coriander leaves, salt, and pepper to taste.
- For a chili dip, blend chopped canned tomatoes, brown onion, chilies, lemon juice, salt, sugar, and chopped coriander leaves until combined but still textured.
