Description

Ground Turkey Shepherd’s Pie layers sautéed carrots, bell peppers, onions, and garlic with browned ground turkey seasoned with salt, pepper, sage, and rosemary. Tomato paste and chicken broth enrich the filling, which simmers until flavors meld and the turkey is fully cooked.

The topping is made by boiling cauliflower florets until tender, then pureeing them with almond milk, butter, garlic, salt, pepper, and egg yolk to create a smooth mash. This cauliflower mash replaces traditional potato topping, offering a lighter texture and subtle garlic flavor.

After assembling layers in a baking dish, the pie is baked until the cauliflower topping is set. This dish functions as a satisfying, protein-rich meal incorporating vegetables and herbs for balanced flavor.

  • 2 Tbsp. olive oil
  • 1 c. carrot finely chopped
  • 1 c. bell pepper finely chopped
  • 1 c. onion finely chopped
  • 2 cloves garlic
  • 1 lb. ground turkey 93/7
  • 1 tsp. salt
  • ½ tsp. black pepper
  • 1 ½ tsp. sage fresh, finely chopped
  • 1 ½ tsp. rosemary fresh, finely chopped
  • ¾ c. green peas
  • 2 Tbsp. tomato paste
  • ½ c. chicken broth
  • 5 c. cauliflower fresh or previously frozen, florets
  • ½ c. almond milk
  • 3 Tbsp. butter or ghee, melted
  • 1 clove garlic crushed
  • ½ tsp. salt
  • ¼ tsp. black pepper
  • 1 egg yolk

Instructions

  1. Preheat oven to 400 degrees.
  2. In a large skillet over medium heat combine 2 tablespoons olive oil, carrots, and bell peppers. Saute for 2-3 minutes.
  3. Add onion and garlic and continue cooking for 4-5 minutes.
  4. Push vegetables to the side of the skillet and add ground turkey, 1 teaspoon salt and ½ teaspoon pepper.
  5. Cook turkey for 8-10 minutes, or until completely cooked through.
  6. Use a meat tenderizer to crumble turkey completely.
  7. Add herbs, peas, tomato paste, and broth. Stir to combine, cover, and simmer for 5-10 minutes.
  8. Bring a large pot of water to a boil. Add cauliflower and boil for 10-12 minutes, or until cauliflower becomes tender.
  9. Drain water and dry cauliflower completely.
  10. Add cauliflower, almond milk, butter, ½ teaspoon salt, ¼ teaspoon pepper, 1 clove garlic, and egg yolk into the bowl of a food processor.
  11. Process for 2-3 minutes, or until cauliflower is completely smooth.
  12. Spray a 9x9 inch square baking dish with non-stick cooking spray and layer the ground turkey/vegetables. Spread the mashed cauliflower on top of the ground turkey.
  13. Bake in preheated oven, uncovered, for 25-30 minutes. Broil for 5 minutes on Hi.
  14. Serve immediately and enjoy!

Notes

  • Fresh thyme can replace rosemary or sage according to preference.
  • Omit green peas for a Paleo-friendly version of the shepherd’s pie.
