Ingredients

Servings
  • ½ cup chicken broth
  • ¼ cup hoisin sauce
  • 1 tablespoon dry sherry can sub Shaoxing wine
  • 2 teaspoon white vinegar
  • 1 teaspoon cornstarch
  • 2 tablespoon cooking oil such as grape seed or avocado oil, high-heat
  • 3 cloves garlic minced
  • 1 small onion finely chopped
  • 1 tablespoon ginger minced
  • 1 pound ground turkey
  • 1 each red pepper diced
  • 1 each yellow pepper diced
  • 1 cup scallions about ½ bunch, chopped
  • 1 tablespoon sesame seeds toasted if desired

Instructions

  1. Whisk together the broth, hoisin, sherry, vinegar, and cornstarch in a small dish.
  2. Heat the oil in a large, heavy skillet or wok over high heat. Add the garlic, onion, and ginger and stir-fry until the onion is starting to soften and turns translucent, about 3 minutes.
  3. Add the turkey and break it apart with a spatula. Cook, crumbling the meat as it cooks until it is only pink in a couple of spots, about 5 to 6 minutes.
  4. Add in the peppers and the sauce and cook, stirring often, until the peppers are tender and the sauce is thick, 5 to 6 minutes.
  5. Stir in the scallions and remove the skillet from the heat. Sprinkle the stir fry with sesame seeds before serving.

Notes

  • Leftovers can be kept in a sealed container in the refrigerator for up to three days.
  • Make sure to reheat until steaming hot.
  • The stir-fry can be reheated in a non-stick skillet, covered.
  • If the sauce thickens too much, add a splash of broth.
  • It can also be heated in the microwave on high heat for 2 minutes per portion.
