Description
This recipe begins by heating olive oil in a skillet and cooking lean ground turkey with a mix of spices including garlic powder, smoked paprika, onion powder, cumin, and chili powder. The turkey is broken up as it cooks over medium-high heat until thoroughly done and seasoned to taste with salt and pepper. Tomato paste can be added near the end primarily for color, though it may be omitted depending on preference. While the turkey cooks, tortillas are warmed and toppings prepared for assembly.
The resulting taco filling is balanced with warm tortillas and a choice of toppings such as sour cream, guacamole, cilantro, salsa, hot sauce, onions, or cheese, allowing customization. The recipe yields approximately 2 to 3 tacos per person with toppings included. Doubling the recipe is recommended for larger appetites. Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey lean
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika

- 1 heaping tablespoon tomato paste optional

- flour tortilla or corn tortilla, for serving
- Toppings (optional, to taste): sour cream, guacamole, cilantro, salsa, hot sauce, onions, cheese, etc.
Instructions
- Pre-heat your oven to 350F (for warming tortillas), stack tortillas and wrap them in foil and place in oven. Or use a tortilla warmer or warm the tortillas over a gas stove burner if you have one. You can prep the toppings beforehand or while the meat is cooking.
- Add the olive oil to a skillet along with the ground turkey and the spices. Cook, over medium-high heat, breaking the meat up as you go along, for about 8-10 minutes or until cooked through. When the meat is close to being done, stir in the tomato paste if using (I mostly add it for color, and I sometimes leave it out since I add a lot of toppings to my tacos for flavor/moisture anyway). Season with salt & pepper as needed.
- Top the tacos as desired and enjoy immediately.
Notes
- This recipe yields about 2-3 tacos per person when ample toppings are used; double the recipe for larger servings.
