Guilin Rice Noodles feature stir-fried soybeans, leeks, ginger, pickled vegetables, and sirloin alongside tender rice noodles. The dish balances savory soy-based seasonings with aromatic spices like star anise, Sichuan peppercorn, and cassia cinnamon, layered with soft scrambled eggs and varied textures from pickled toppings.

Description

This recipe requires soaking soybeans overnight with salt, then drying and stir-frying them in sunflower oil until browned. Aromatics such as sliced leek and ginger, pickled red peppers, bamboo shoots, and cowpeas are prepared separately. Eggs are boiled and then scrambled. The sirloin is cooked with several aromatic spices including star anise, Sichuan peppercorn, cassia cinnamon, bay leaf, and fennel, seasoned with both dark and light soy sauces and salt.

Rice noodles serve as the base, combined with these richly flavored components, offering a multi-textured experience with soft noodles, tender meat, crunchy pickled vegetables, and flavorful fried soybeans. The blend of Chinese spices and pickled elements provides complex flavors typical of Guilin cuisine. This is a substantial main dish suitable for a hearty meal.

  • 100 gr soybeans
  • 6 tablespoons sunflower oil
  • 1 leek
  • 6 lices ginger
  • 50 gr pickled red peppers
  • 3 egg
  • 500 gr sirloin
  • 1 tablespoon sugar
  • 5 bay leaf
  • 5 gr cassia cinnamon or Chinese cinnamon
  • 5 gr Sichuan peppercorn
  • 5 gr star anise
  • 5 gr fennel
  • 1 tablespoon dark soy sauce
  • 4 tablespoon soy sauce light
  • 1½  teaspoon salt
  • 1 bunch green onions
  • 200 gr pickled cowpea
  • 2 teaspoons chili powder
  • 100 gr bamboo shoots pickled sour
  • 1 lettuce

Instructions

How to Make Guilin Rice Noodles:

  1. Firstly, we should prepare 100g (3½ oz) soybeans one night in advance. Use water to wash soybeans.
  2. Then add 1 teaspoon salt, enough water into the bowl. Stir them evenly.
  3. We can also adjust the taste to our flavor by tasting the water.
  4. Then immerse them for at least 10 hours.
  5. After 10 hours, drain the soybeans.
  6. Then put the soybeans into the pan and fry the water over medium heat.
  7. After that, add 2 tablespoons of sunflower oil into the pan.
  8. Then stir fry them over low heat. After they become burnt yellow, it means that the soybeans are cooked.
  9. Then save them for later.
  10. Second, we should prepare ingredients.
  11. Cut 1 leek into pieces. Then save them for later.
  12. Cut 6 slices of ginger. Then save them for later.
  13. Cut 50g (1 ¾ oz) pickled red peppers into pieces. Then save them for later.
  14. Next, we should prepare 3 eggs.
  15. Firstly, put eggs into the pan.
  16. Then add enough water to immerse them.
  17. Then use medium fire to boil them.
  18. After the water has boiled, use a small fire to cook it for 8 minutes.
  19. After 8 minutes, drain them and put them into the cold water to immerse for 3 minutes.
  20. Then drain and shell them.
  21. Next, we should prepare 500g (1.1 lb) sirloin. Cut sirloin into pieces.
  22. We can also cut it into the pieces we like. Then save them for later.
  23. Next, we should braise sirloin and eggs.
  24. Add 2 tablespoons sunflower oil, 1 tablespoon sugar into the pan.
  25. Then use a small fire to stir fry them. After the sugar become dark and have foam, add sirloin into the pan. Stir fry them evenly.
  26. Then add 5 bay leaves, the Chinese cinnamon, Sichuan peppercorns, star anise, fennel, leek and ginger into the pan.
  27. Stir fry them for 2 minutes.
  28. Then add 1 tablespoon dark soy sauce, 3 tablespoons light soy sauce into the pan. Stir fry them evenly. Then put them into the saucepan.
  29. Then add eggs, enough water into the saucepan.
  30. Use a high flame to boil them.
  31. After the water has boiled, use a small fire to cook it for 1 hour. We should scum the bubble when the water is boiling.
  32. After 1 hour, add 1 teaspoon salt, 1 bunch of green onions into the saucepan. Then continue to cook it for 30 minutes.
  33. Then drain the eggs.
  34. After the eggs become cold, cut them in half. Then save them for later.
  35. Next, we should prepare 200g (7 oz) pickled cowpea. Use water to wash pickled cowpea twice.
  36. Then cut them into pieces.
  37. Then add 1 tablespoon sunflower oil, 1 teaspoon chili powder, half pickled red peppers into the pan. Stir fry them until fragrant.
  38. Then add pickled cowpea into the pan. Stir fry them for 1 minute. It can help us to maintain the crispness of pickled cowpea. Then save them for later.
  39. Next, we should prepare 100g (3 ½ oz) pickled sour bamboo shoot. Use water to wash pickled sour bamboo shoot twice.
  40. Then add 1 tablespoon sunflower oil, 1 teaspoon chili powder, half pickled red peppers into the pan. Stir fry them until fragrant.
  41. Then add pickled sour bamboo shoot into the pan. Stir fry them for 1 minute.
  42. Then add 1/2 teaspoon light soy sauce, 1/2 teaspoon salt into the pan.
  43. Stir fry them evenly. Then save them for later.
  44. Next, we should prepare 1 lettuce. Use water to wash lettuce.
  45. Then add enough water into the pan. Use a big fire to boil it.
  46. After the water has boiled, add lettuce into the pan to blanch for 30 seconds.
  47. Then drain and put them into the cold water to wash. Then save them for later.
  48. Now we can start to cook Guilin rice noodles.
  49. Add enough water into the pan. Turn the heat up to high to boil it
  50. After the water has boiled, add Guilin rice noodles into the pan.
  51. We should also stir them from time to time to avoid sticking the pan.
  52. Then cook it until easy to chop it off with chopsticks.
  53. Then drain them and put them into cold water to immerse for 3 minutes.
  54. Then drain and put them into the bowl.
  55. Then add some lettuce, some pickled sour bamboo shoot, some pickled cowpea, some soybeans, half egg, some sirloin, enough braised soup into the bowl. Then we got the delicious Guilin rice noodles.
