Gyoza Recipe

This Gyoza recipe uses ground turkey combined with green onions, shredded cabbage, and garlic for a flavorful filling wrapped in wonton wrappers. The gyoza are pan-fried until golden, then steamed to finish cooking the filling, producing a crispy-bottomed dumpling with a tender, juicy center. Sesame oil and soy sauce add subtle Asian flavor notes. The cooked gyoza can be served warm with a dipping sauce of choice.

Description

Gyoza Recipe features ground turkey mixed with chopped green onions, shredded cabbage, pressed garlic, sesame oil, soy sauce, salt, and pepper as the filling. Each wrapper is filled, sealed by brushing edges with water, and laid out spaced on a baking sheet. The gyoza are pan-fried in a lightly oiled skillet until golden brown on the bottom, about 3 minutes. Then water is added, and the pan is covered to steam the dumplings for several minutes to fully cook the filling. This cooking method gives the gyoza crisp bottoms while keeping the filling moist.

The dumplings combine the mild turkey with fresh cabbage and onions, accented by garlic and sesame oil, resulting in a savory but not heavy flavor. The crisp pan-fried edges contrast with the soft steamed wrapper tops and juicy filling. These gyoza are versatile for serving as appetizers, snacks, or part of a meal alongside rice or noodles.

Gyoza should be served warm, ideally immediately after cooking to maintain the crispy and tender texture. Pairing with a dipping sauce like soy sauce with vinegar or chili oil complements the flavors. The recipe uses common ingredients and a straightforward cooking method suitable for home cooks.

Ingredients

Servings
  • 52 wonton wrappers
  • 1 lb ground turkey
  • 1/2 cup green onions chopped
  • 2 cups cabbage shredded
  • 2 garlic pressed, cloves
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp neutral cooking oil to cook each batch, generic cooking oil
  • 1/4 cup water (to cook each batch)

Instructions

  1. In a large bowl, combine the ground turkey with onions, cabbage, pressed garlic, sesame oil, soy sauce, salt and ground black pepper.
  2. Place an equal portion of filling into each wrapper.
  3. Brush the edges with water using your finger and seal the filling on the inside (see detailed instructions in the post).
  4. Place the gyoza on a baking sheet, leaving space between each one to avoid them sticking together.
  5. Preheat an oiled skillet on medium-high heat. Place gyoza in the skillet and pan fry until they turn golden brown — about 3 minutes. Add 1/4 cup water, cover with a lid, and let them steam for 3-4 minutes to cook the filling.
  6. Serve with your favorite sauce while the gyoza are warm.
